Slada Batata Halwa (Sweet potato salad)


Ännu ett fantastiskt recept från Claudia Rodens Arabesque.

Serves 4

1 large onion chopped
5 table spoons olive oil
500g orange fleshed sweet potatoes (we used the white ones and the result was very good)
½ table spoon ginger
½ table spoon ground cumin
½ table spoon paprika
Salt
7 green olives
Peel of one preserved lemon
Juice of ½ fresh lemons
2 table spoons chopped flat leaf parsley

Method

Fry the onion in 2 tablespoons of the oil until golden. Cut the potatoes into pieces, add to the pan and barely cover with water. Add the spices; a little bit of salt and the rest of the oil (we did not add extra oil). Cook until the potatoes are tender, and the liquid is reduced to a sauce. Keep an eye on the potatoes so they do not go all mushy. Serve the salad at room temperature with chopped parsley, mixed with olives, lemon juice and chopped preserved lemons.
